Back years ago when our kids went off to college my husband jokes that our kitchen was closed for good! Well, it is a joke, of course! I do cook.....occasionally!!
If you have an empty nest or are alone, you know how hard it is to cook for two or less!
Especially when you spent most of your adult cooking regularly for your family .
We are always on the run at our house: have to be here or there at a certain time or run to the hospital to see about someone, etc. etc. It is much easier for us to snack at home or eat out.
Which is what we mostly do.
Since hubby is traveling , I have a hard time getting excited about eating at all! I did have a lovely dinner out one night with some friends . Most of my meals alone are pictured in the above picture! Give me a Diet Coke and I'll eat anything in the snack world! Peanut butter and crackers are great!
I also keep a can of this because it fills you up and tastes pretty good also!
But today, I was hungry! Hubs is not a "vegetable" lover so a meatless meal would not go over

big if he were home. I, myself, could probably be a vegetarian ......especially in the summer!
I made a big pot of pinto beans and cornbread muffins yesterday to take to a sweet neighbor who had been in the hospital. So I had a small bowl left and I just got all excited and decided to cook squash and corn-on-the-cob! Delish, if I say so myself!
So now I have had my "veggie" fix......so Hubby, come on home.....I bet I can find a pork chop around here somewhere!!

I am the same way about cooking...even now that Connor eats pretty "normal"--it is hard for me to get motivated! I am working on it, though.

That's a picture of one of my favorite snacks. We can hardly keep Ritz crackers around here now between all 3 of us snacking on them. Brody loves them,too!
I love all veggie meals but Josh would just pass out if there wasn't chicken or something with it!:) Must be a guy thing!
this post made me giggle. i will confess when i was single, or even now when my husband is away, i sometimes will eat a can of turnip greens for dinner. ;) it is my secret supper...and i LOVE it!

i was thinking about you yesterday in the grocery store. my husband left for springdale today for two days and i was getting quick things to cook that he doesn't especially like. and i wondered what you were eating while hubby was gone.

Recently I have been eating a lot of fresh tomato sandwiches. Yum!! I am like you, in the summer I could just live on fresh veggies and cornbread. Since my husband and I are empty nesters, we eat out a lot. We split our dinner at most places, since restaurants give you enough for an army!!! Or we use a lot of coupons that are buy 1/get 1 free. I just keep a stash of coupons and we look at those most of the time to decide where we will go eat. I totally love to cook, but it is not the easiest for 2. Plus, I like to free up my time for other things. A lot of times when I am alone (especially in the winter) I will just eat a bowl of old-fashioned cooked oatmeal. Have a great day. I am like that too when my husband is away...I love ritz crackers and coke...especially with a little bit of peanut butter and jelly! I also usually eat mexican food when he is gone. Every once in a while, I actually look forward to being alone just so I can eat all of the above!! :-)
You should have come to India with me. Everywhere you look are "veg" restaurants. I even saw a "veg" foodcourt. The first thing I will do when I get off the plane in Newark is get the biggest cheeseburger I can find!

Your veggie plate looks yummy!! My hubby isn't a veggie guy either. He likes to say, "They aren't food. They are what food eats!" Ha! I'm curious to know what you did to that squash because it looks casserole-ish and I want to take a bite of it! :)
I looked for Honey Wheat Ritz today because yesterday I read on a blog about an interesting recipe for them. Now, there's a horrible sentence that I'm too tired to go back and fix. You get the idea, right? :)
Anyway, Ritz with peanut butter and marshmallow cream spread on it, topped with banana slice and strawberry slice, then sprinkled with cinnamon. Doesn't that sound like some good "alone" food?

For a short time my husband worked mid-shift after our kids were gone and I would eat a bowl of shredded wheat for dinner many nights.
I do have a veggie lunch fairly often in the summer - corn on the cob and sliced tomatoes...it really doesn't get much better than that when they are in season!
Oh, so funny you should bring up this topic. I just recently got out on my own and still trying to figure out what works for me as I'm now having to fend for myself, haha!!! :)
So true - when hubby is away I eat what I want. He was recently away for 2 weeks and I ate corn on the cob and watermelon. He likes those things also but wants them with a rib or two on the side. We do eat a lot different now that the kids are gone. I never thought I would see the day when he would be content with cereal for supper.
I'm with you...I think I could totally be a vegetarian (especially if it was that meal you made). YUMMY! Oh, and give me a Diet Coke (DC as it's known in my house...ha) and I'm a happy girl. And, you can't ever go wrong with a Ritz cracker!

It is soooo hard to cook for two people. We end up having left overs, occassionally eat the leftovers, and then occassionally they ruin.

I eat cereal a lot by myself and soup. Bryan is not a soup eater.
WE have been so busy lately I didn't realize how little I had cooked lately until the other night I cooked a big dinner and Mario said, "A homecooked meal!" Ha! I love Tostitos multi grain chips with guacamole and good salsa!
