Here We Go Again!!!!


This is the wreath on my front door.  I really didn't mean it..........





Hubs got up around 4 a.m. and it wasn't doing anything. Then by about 6 a.m. it started snowing BIG time and now we have at least 6 inches and it's still snowing BIG time!!






Kelly has already called me early this morning and they are getting a real blizzard!

So I guess you would say "SNOW DAY in North Arkansas" !!


On a brighter note (as they say on the TV news after they have been giving a horrible story and then move to a silly story about cats who mother "motherless" wild animals)  I made some fresh blueberry  muffins yesterday and sent some to work with Hubs with strict instructions to share them.

Later yesterday our church secretary "twittered" me and said they were so good and would I put the recipe on my blog.  And then another girl ask me if I would put the recipe on my FaceBook page.

I feel like Paula Dean!!!

They were good, if I say so myself, so here is the recipe!

Let me say I only made these because WM had fresh blueberries on sale and I just could not resist!
Also I like to use bread flour instead of just regular 'ole all-purpose flour.
I use King Arthur unbleached bread flour. 


Blueberry Muffins


2 1/4 Cups flour
3 1/2 teaspoons Baking Powder
1 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup real butter (Yes, I am Paula Dean)
1 whole egg
1 cup milk
1/2 teaspoon Vanilla
1 cup fresh blueberries


Put together the first 5 dry ingredients. (flour, baking powder, sugar, salt, cinnamon). Then cut in 1/2 cup butter.

In a separate bowl combine the egg, milk and the vanilla.

Add to dry mixture stirring gently until blended, then fold in the blueberries.

Pour into muffin pan.

If you want a little topping, sprinkle a mixture of sugar/cinnamon on the top of each muffin.

Place in the oven at 350 degrees for 25-30 minutes.

Enjoy!

I like to reheat them for a few seconds in the microwave the next day! Taste like they just came out of the oven again!


These would be good on a SNOW DAY!!  (or any other day for that matter!)

Oh no, more snow! They say we have a system heading this way but it's weak. Only supposed to produce an inch or two! For me that is an inch or two to many. Those muffins look yummy. Much better than the boxed kind I make. Thanks for sharing the recipe. Stay in & stay warm!

The muffins were SO good!! I thought those muffin mixes were good, I had NO IDEA what I was missing by NOT being Paula Dean. You can send fresh baked products to work ANY TIME.

Your snow is headed our way. We are waiting to see if they have underestimated here as well. We seldom get snow here - mostly sleet and ice - so if this thing holds together as it approaches us here in central Alabama, this could be "the big one".

Ok, I am going to try them without the egg though..I am allergic to eggs and will have to use a substitute.

But they really made me hungry for muffins on this snowy day...and I do have some blueberries!
